Potato and leek soup but with miso

Ingredients -

1 l stock (
chicken/veg
)

1 carrot(s)

2 leek(s)

4 potatoes (
medium
)

50 g parmesan

3 tbs miso

3 cloves garlic

30 ml double cream

1 onion(s)

Instructions

1 Roughly chop the vegetables and garlic and add to a pot with some butter.

2 Once the vegetables have started to soften, pour in the stock and simmer until everything is tender.

3 Blend the mixture to make a thick soup and season with salt and pepper.

4 Stir or blend in the miso along with a little more butter.

5 Serve with crusty bread and an optional drizzle of double cream.
