Inspired by many insta recipes. Adjust the sauce to your liking if too sweet/ salty as the measurements might be a bit off. Can sub Chinkiang vinegar for normal rice vinegar.
Rice paper peanut noodles Photo

Ingredients -

 tsp sichuan pepper peanut mix (

 tsp sugar

 tsp chilli oil

 tsp tahini
9
 sheets rice paper
2
 tsp chinese black vinegar (

chinkiang is best

)

 tbsp peanut butter

 tsp soy sauce (

add more to taste

)

Instructions

Soak 3 sheets of rice paper stacked on top of each other for about 30 seconds so that they stick together. Remove from the water and oil on both sides before placing down to prevent sticking. Repeat for the remaining rice paper.

Once the stacked rice paper is soft, cut into strips and place into a bowl.

Mix all of the sauce ingredients together and toss with the noodles.

Enjoy with sliced cucumber and spring onions if you have them !
