Jollof rice 🌶️ Photo

 bay leaves

 red pepper

Instructions

Chop up the onion, red pepper, tomatoes and add to a food processor along with the garlic, ginger and scotch bonnets (add more scotch bonnet if you want but this was right on the edge for me). Blitz into a liquid.

Fry off the mixture in some oil for ~20 mins until thickened. Then add the washed rice, seasoning and stock.

Add a protective layer of tinfoil and reduce the heat. Simmer for 20 mins stirring occasionally, add more water if you need but don't overdo it as it should be relatively dry. Enjoy with whatever you want, or on it's own 🌶️
