Peanut and sweet potato stew Photo

Ingredients -

cm ginger

 cloves garlic
150
g spinach

 tbsp cumin

 tbsp peanut butter

 onion(s)

 tbsp tomato paste

 sweet potatoes

 tsp tumeric

g coriander

 tbsp ground coriander
1
 handful peanuts
1
 tsp chilli flakes

 can chickpeas
1
 can coconut milk
1
 tbsp curry powder

g peanuts
1
 tbsp paprika
1
 can tomatoes

Instructions

Finely dice the onion and add to a pan with oil. Cook down for 10 minutes before adding the ginger and garlic.

Add the tomato paste and spices to the mixtures and cook for another minute.

Pour in the canned tomatoes along with the sweet potato cut into bitesize chunks and the can of chickpeas(drained). Simmer for 15 minutes.

Add the coconut milk and peanut butter and simmer for anothe 15 minutes until the sweet potato is tender.

Finally add the spinach until wilted and serve with fresh coriander, chopped peanuts, lime and brown rice or quinoa.
